Maille Christmas Chicken
  • 1 whole chicken
  • 1 tbsp butter room temperature
  • 1 garlic clove
  • 50 g raspberries
  • 1 tbsp frozen chopped basil
  • 2 tbsp ground cinnamon

For the Glazing:

  • 3 tbsps cranberry compot
  • 4 tbsps maple syrup
  • 4 tbsps Maille wholegrain mustard
  • 1 bunch rosemary stalks
  1. In a blender mix the Maille Dijon Originale mustard, butter, garlic, raspberry, basil and cinnamon, until well incorporated and season to taste.

  2. Gently loosen up the skin starting from the neck of the chicken all the way until the tail with your fingertips.

  3. Massage the Flavoured mustard mix, underneath the skin all over the chicken.

  4. Place the chicken on a roasting rack and roast in a preheated oven at 180 degrees C.

  5. In the meanwhile, mix the cranberry compote, maple syrup, Maille wholegrain mustard, oil and the rosemary in a bowl

  6. Brush the mixture over the chicken about every 15 minutes whilst roasting.
