Breakfast Potatoes With Faux Hollandaise Sauce

Breakfast Potatoes With Faux Hollandaise Sauce
  • 1/2 cup plain Greek yogurt
  • 1/2 cup mayonnaise
  • 2 tsp Worcestershire sauce
  • 1/2 lemon juiced
  • 3 tsp Maille Traditional Dijon Origanale mustard

For the potatoes:

  • 2 pounds of mini potatoes
  • 2 tablespoons olive oil
  • Salt and pepper
  • Fresh thyme or rosemary
  1. In a small bowl, stir together all ingredients until well combined. That’s it!

For the potatoes:

  1. Preheat oven to 425 degrees.

  2. Spread 2 pounds of mini potatoes on a baking sheet.

  3. Drizzle with 2 tablespoons olive oil, sprinkle with salt and pepper and a few sprigs of fresh thyme or rosemary.

  4. Bake for 30-35 minutes, or until the potatoes are golden brown. Serve drizzled with faux hollandaise sauce (they taste especially delicious with the herb version).
